Bring It On, Fatheads!

My phone camera doesn't do it justice.

Roasted pork tenderloin, mozzarella, arugula, roasted red pepper mayo, on ciabatta. Seriously good sandwich and one of the best use of leftovers I've ever come up with.

Thanks. It was really good. Again, the camera on my phone didn't to it justice.

In case you're wondering, the mayo is, (very) roughly:

3/4 cup mayo
1/3 - 1/2 cup roasted red pepper
1 tbs balsamic vinegar

I didn't think it needed salt or pepper, but somebody else might think differently. Figured I had the saltiness of the mozz and the pepper of the arugula to cover that...
